Advent Cookies - How Many is Created from One

We were talking about easy recipes a week or two ago on the Waldorf School Online list and I wanted to share another one with you all. We made shortbread cookies last week! We have not made these for perhaps 4 years and when I served them to a couple friends they said they had never had them before! I can't believe we don't make these more often, though. They are so simple - a child could make them - and they are great when you are low on groceries! In fact, that is why we made them last week. We were in a snowstorm and I wanted something sweet and warm to eat but I didn't have ingredients to make any comfort food!

So here they are - my favorite cookies!

Scotch Shortbread
1/2 lb. butter
1/2 cup confectioners sugar (we used organic)
1/4 tsp. baking powder
2 cups of flour (they are nicer with just white unbleached but I used WW/White mix and they were still yummy - and just a little more hearty).
1/4 tsp. salt

1. Cream butter, gradually add sugar
2. Beat well
3. Mix flour, salt, Baking Powder and add to above
4. Roll out with pin or press into mold
5. Cut and prick with a fork (before baking)
6. Bake at 350 for 20-25 minutes

These are also nice holiday cookies because you can cut them in shapes (but don't take them from the pan, they will separate as they cook) but you don't have to do all that work you do with sugar cookies...so think Valentine's Day, etc...

Kristie - if you substitute a tbspoon or thereabouts of cornflour for some of the wheatflour, it makes your shortbread even softer.
